The Best Creamy Cheesy Grits

Top these with whatever you want. I used shrimp and bacon here. Also corn and scallions. Scallions can be used to get rid of unwanted houseguests.

3 tbsps butter (divided 2 and 1)
1-2lb shrimp - thawed and peeled
1 cup quick cooking grits
2 cups chicken broth
2 cups milk, cream, or half-n-half
1 cup shredded cheese (any/your favorite)
4 slices bacon
1/4 cup wine (white, red, sherry, whatever)
toppings: corn or beans or scallions or cilantro

In a medium pot melt 2 tbsps butter. Add chicken broth, cream, and grits and bring to a boil. Reduce heat and let simmer covered for 15 minutes. Stir in cheese and keep warm over low.

In a large frying pan, cook bacon over medium heat until done and move to paper towels. Do not dump grease! Reduce heat to the lowest temp while you chop up the bacon.

Raise pan heat back up to medium. Deglaze bacon grease pan with white wine, scraping up any bacon bits. Add shrimp and bacon back into pan.

Once shrimp are cooked through, add a heaping scoop of grits to a bowl and then top with shrimp and bacon and toppings and ENJOY (maybe with some more wine on the side).
