Stout Shepherd’s Pie

An offering of some dark ale to the goddess. She will approve.

2 tbsp olive oil
1/2 cup chopped onion
1/2 cup chopped carrot
1/2 cup frozen peas
1/2 cup frozen corn
1 tbsp garlic
2 tbsp tomato paste
1 cup chopped beef (can buy cheap steaks or stew beef)
seasonings to taste appr 1/2 tsp each: salt, pepper, rosemary, thyme, bay leaf
1/2 bottle or can stout beer
1 cup broth (any: chicken, beef, etc)
2-3 cups mashed potatoes

In a stock pot heat olive oil over medium and add onions, carrots, and beef. Cool for a bit and add frozen corn and peas and then seasonings. Add garlic and tomato paste. Stir and cook for a bit more and add the beer and broth. Heat oven to 350. Simmer pot contents until oven is preheated. Dump pot contents into 13 x 9 baking dish. Top with dollops of mashed potatoes. Bake for 30 minutes. Let cool for 10 and serve.
