Chocolate Potato Cake
You can carry a potato in your pocket to guard against illness.
1 cup butter softened
2 cups sugar
2 eggs
1 cup leftover mashed potatoes
2 tsp vanilla extract
2 cups flour
1 cup Milk
1/2 cup cocoa powder
1 tsp baking soda
1tsp salt
Optional toppings: powdered sugar, whipped cream, berries, ice cream
Soften butter and whisk together with sugar. Add eggs and vanilla and then mashed potatoes and stir until smooth. Preheat oven to 350. In a separate bowl, whisk together flour, cocoa, baking soda, and salt. Alternate adding dry ingredients and milk to sugar mixture. Whisk until smooth. Grease a 13 x 9 pan and smooth batter into it. Bake for 40 minutes. Served with your favorite toppings.
