Green Enchiladas

Green chili was traditionally used in counter magic, protection rituals, and to drive out evil spirits.

This recipe is super versatile. Use whatever protein, sauce, cheese, and toppings you want!

cooked chicken or turkey
bag of taco size flour tortillas
container of whipped cream cheese
small can diced green chilies
2-4 cup bag shredded cheese (colby-jack, cheddar, mexican blend, etc.)
regular can green enchilada sauce

  1. gather and prep ingredients if needed such as pulling chicken plus 13 x 9 pan or dish

  2. preheat oven to 350 and spray pan with non-stick

  3. place 8 tortillas width-wise open side up in pan (like tacos)

  4. distribute meat evenly throughout tortillas

  5. mix up cream cheese, diced green chiles, and some shredded cheese in a bowl

  6. spread mixture evenly on top of meat inside all of the tortillas and roll up facing seams down

  7. pour enchilada sauce atop all enchiladas to cover

  8. sprinkled shredded cheese across top to cover sauce and tortillas

  9. bake for 30 minutes, let sit for 5, and serve with favorite toppings and side

    suggested toppings: pico, avocado, sour cream, hot sauce, scallions, cilantro, black olives
