Green & White Chili
With cumin for confidence, oregano for luck, and a green pepper flake blend for a spicy day.
2 tbsp olive oil
1/2 a white onion - chopped
1 minced jalepeno
1 tsp minced garlic
1 lb ground chicken or turkey (or pork)
1 tsp cumin
1 tsp oregano
32oz chicken broth
1 can of white beans
1 sm can of diced green chilies
1 cup corn (canned or frozen)
pepper flakes - I highly recommend Flatiron Pepper Co Hatch Vally Green blend
toppings: shredded cheese, sour cream, cilantro, scallions
In a medium to large pot heat olive oil over medium. Add onion and jalapeno and cook about 5 minutes. Add garlic and stir. Add ground meat and cook until pink is gone, breaking up chunks as you go. Add cumin and oregano and stir. Pour in chicken broth, can of bean, can of chilies, and corn. Add some pepper flakes and stir. Simmer for at least 15 minutes. Serve with your favorite toppings and tortillas or tortilla chips on the side.
