Baked Potato Salad
Salt to absorb negative energy. Black pepper to ward off evil.
Can be served chilled or warm. A healthier version of those deep fried potato skins we grew up on.
6 or so potatoes depending on size
4 slices of bacon
1/2 cup sour cream
1/2 cup mayonnaise
2 tbsp mustard (any)
shredded cheese
salt and pepper to taste
sliced scallions
Preheat oven to 400 and prick potatoes with a fork. Bake for one hour. Let cool.
While potatoes bake, cut up and pan fry the bacon. Drain off fat on paper towels.
Once potatoes have cooled, cut into cubes and toss into large bowl.
Add sour cream, mayo, mustard, salt and pepper to potatoes and stir.
Add bacon, cheese, and scallions to potato mixture and stir.
Serve immediately or chill and serve later.
